The advantage of a pressure cooker is that it will cook things faster at a higher heat without burning. If you boil a pot of water, the water will never get hotter than the boiling point (212 F or 100 C). Before it can, it turns to steam and escapes. If you try to superheat the water (keep it on high heat after it's started boiling), it will just boil over until all the water is gone.

With a pressure cooker, the pressure prevents the water from boiling at the normal boiling point. So, the temperature can be increased beyond that point without the pot boiling over (it's sealed under pressure, hence the name). This allows things to cook faster without drying out or burning.

I don't know what a disadvantage would be, except that it's more expensive than a regular pot.

I have a stainless pressure cooker.It's works good but you can't open it once the pressure is built up so no way to stir to prevent burning or check on the cooking progress.My daughter makes delicious food using it and the food tastes better than when using regular pots and pans.I think she can tell by the aroma of the food when the cooking has completed.I don't have that talent.

  2. Stainless steel will most likely cost more but it won't stain like aluminium. I think that it will boil down to a preference rather than which one is better. I have two, both aluminium. One is a consumer grade, light and easy to use. The other is more Commercial grade and the lid is machine fitted and uses no gasket. It works great also but it is heavier and of course larger. I would think that with normal use either one would do just fine. The stainless model may be easier to keep looking good. All in all stainless will be a more robust unit. Weigh the cost difference and how much you will use it and get the one that fits your needs. My wife has an electric that she loves. Non stick removable pot. Works just great. I use the larger cookers for canning.
