Which is best for stove top cooking, electric or gas range?

Question by patience: Which is best for stove top cooking, electric or gas range?

Most people seem to like gas, but I hate it. I've converted gas stoves to electric in the last 4 houses I've lived in:) I've had smoothtop cooktops for 30+ years, and would never have anything else. They're easy to clean; heat up quickly and evenly; and you can use them as extra counter space when you aren't cooking......

  1. Any chef would answer Gas, just because it lets you have finer/quicker control over temperature.

  2. You really can't say which is better. It is all a matter of opinion. If you do some research you can find more information out on what professionals and consumers think and their opinions. It has been said that gas stoves cook food more easily and sometimes quicker than a electric stove.

Overall it is a matter of personal taste and opinion. Personally I like electric stoves because they are a lot easier to clean. The gas stove is more of the standard choice however.

    Hope this helps

  3. I've heard that gas cooks food more evenly. I have had both and don't like having a gas stove. I prefer electric. Not because of the way it cooks, but because I don't like having gas appliances. The difference in cooking seems minor to me. If anything, I have to watch the food more closely with gas because it seems to cook hotter, faster.

  4. Electric has the ease of cleaning. A gas stove is much more controllable in temperature.

  7. I've used both and I much prefer gas. Why? Because I can so much more adequately control the heat.

  8. That all depends on WHAT I am cooking and what I am cooking it in.

Some things deserve and get the softer heat of gas range and some get the hot fast electric.

I have a lot of Pyrex cookware which must go on the gas cooktop and a lot of cast iron which can go either place.

Pressure cookers and canners work best on Gas. Candy cooks best on electric. Eggs don't matter I will burn them no matter how I cook them.

I have 3 forms of cooking heat in my kitchen for cooking: electric, gas, and woodstove. It all depends on what I am cooking at the moment as to which stove I like best.

I am by profession a pastry chef, a ranch cook of 50+ yrs, and just fire up which ever stove suits my mood at the moment.

  10. Hello Patience,
I prefer gas ranges. They are better for temperature control. The best thing about electric ones is the flat top ranges. They would be so much easier to clean.

  11. It is all what you get used to. I had gas at my old house. This house has electric. Plus, it is a smooth cooktop and I LOVE that! So easy to clean.
Gas stoves heat up quicker than electric so you have to be a bit patient with electric.

  12. Every house we own gets gas run to the stove, if not already there. I love a gas stove for the eveness adn straightforwardness of the flame.
